Made from 7-year-old Blue Weber agave harvested from estate fields, the piñas are slow-cooked in brick ovens, fermented in open-air pine vats with wild and proprietary yeast, and twice distilled in a copper and stainless steel alambique blend. Aged four months in ex-bourbon barrels, it rests at 40% ABV.
